February's Reader's Choice Week Meal Plan

This is our Reader's Choice week for February! We are so excited about the meals our readers have planned for you! We have made a bit of a change in that we are now doing a 5 day meal plan instead of 7 day meal plan for our Reader's Choice week. If you are like my family we usually eat leftovers one night and end up eating out/frozen pizza another night of the week.

Reader's Choice Meal Plan


Monday
- Jane Keevy's Lentil Casserole
Tuesday- Jenna's Mini Meatloaves w/ Sweet potatoes and veggies
BONUS- Jenna's 5 minute Microwave Chocolate mug cake
Wednesday- Katie Peterson's Spaghetti Pie spot.com/

Grocery List

Monday- Brown Lentil Casserole

Brown Lentil Casserole-grocery list
1 1/2 cups chicken broth (water may be substituted)
1/2 cup long grain white rice
1/2 cup brown lentils
1 small onion
1 15 1/2 ounce can tomatoes-stewed or chopped
1/2 tsp each-basil, oregano and salt
1 T. minced garlic
1 cup shredded cheddar cheese
Salad greens and dressing

Tuesday- Mini Meatloves with carrots/peas mix and sweet potato
1 lb ground beef
2 slices toast
2 eggs
1 tsp garlic powder
1 tsp Tabasco (optional)
1/4 cup picante sauce (use 1/2 cup if you don’t use antipasto)
1/4 cup antipasto
4 slices bacon

Carrots and peas mix
1/2 sweet potato for each person


*Bonus- 5 min. Chocolate Mug Cake


4 tablespoons flour
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips
a small splash of vanilla essence
1 coffee mug

Wednesday-Baked Spaghetti Pie

2 servings Spaghetti
2 cups shredded cheddar cheese
1/4 cup parmesan cheese
1 egg
butter
Spaghetti Sauce

Thursday- Easy Eggrolls

1 can chicken (or cut up chicken breast)
1 bunch green onions
1 can chow mein
1 package eggroll wraps (found in the produce section)
oil (enough for frying)

Friday- Beef Pot Pies

2 cups leftover beef, dice
1/2 cup chopped onion
1/2 cup peas
1/2 cup corn
1 rib celery, diced
1 carrot, diced
1 medium potato, diced
2 tB flour
2 cups water
2 TB beef bullion base
1, pack of 2 pie crusts
1 TB milk
Dash of Mrs. Dash
Dash of pepper
