This is the week of the Pork Loin. I am calling it "One Pork Loin, Four Meals".....creative, huh?
Hey its late!
I am preparing one good sized pork loin and using it to make four different dinners. This is our meat for the week and aside from this we will be eating vegetarian, which is good for our bodies and the environment.
Prepare your pork any way you like. You can crock pot it, grill it, pan cook it, bake it...whatever! Just make the pork and when it cools off cut it into four segments. I went ahead and packed each segment up into separate containers to make my life easier this week.

Monday~ Pork Stir Fry Lettuce Wraps
Tuesday~ Roasted Vegetable and Black Bean Salad
Wednesday~ Pork and Pineapple Taco's
Thursday~ Thai Pizza
Friday~ Grilled Caribbean Pork over Rice
We will be using brown rice twice this week so you can make a double batch (plus it makes for great baby/toddler cereal). We will also be using many of the same vegetables and sweet chili for two different meals. This helps with keeping costs low!
