Easy, delicious Zesty Pico with Chips

Alisha here. This is Katie's week, but I just had to share this pico I made last night that was so good. I got this recipe from "The Full Plate Diet" book. It's a book that encourages more fiber in your diet. I loved it and thought I would share.

1 cup avocado, cut into 1/2" chunks (I just used one avocado)
1 1/4 cups coarsely chopped fresh tomato (I just used one large tomato)
3 Tbs. chopped onion
1/2 clove garlic, minced
1 Tbs. sliced jalapeno pepper, seeds removed (I just used one jalapeno pepper)
3 Tbs. fresh chopped cilantro (I used 2 Tbs. dried cilantro)
1/4 tsp. salt
2 Tbs. fresh lime juice (I used a lemon)

A little bit of prep work:

Combine all ingredients in a bowl. Add an extra jalapeno if you want more heat. Serve 1/2 cup pico with 1 ounce of commercial brand Guiltless Gourmet baked tortilla chips. (I just used whatever chips we still had leftover)To make sure that my kiddos did not eat just the tortilla chips, I did this for them:
They still managed to nibble at the tortilla chip scoop and avoid the healthy vegetables inside. :) They thought the applesauce was a big hit though. :) I LOVED this recipe, and I will be making it again and again, until my kids one day are old enough and wise enough to enjoy it with me. In the meantime, I made them wait a couple of hours (because we are trying to encourage them to eat at meal times) and then I made them PB & J sandwiches so they would not go to bed hungry.
